A Classic, Reimagined (Earl Grey 2.0) We have taken one of Phoenix Sweets’ most beloved flavours and given it a refreshing upgrade. If you love the calming aroma of tea but crave a touch of fruity brightness, this is the cake for you.
The Flavour Profile: Floral, Fruity, & Aromatic We start with our substantial Victoria Sponge base, infused with premium Fair Trade Earl Grey tea leaves. We don't use artificial tea flavouring—we steep real tea to ensure a deep, authentic bergamot aroma.
The magic happens in the filling. We pair the tea sponge with a Lychee Rose buttercream that offers a delicate floral sweetness. To cut through the richness, we add a layer of our homemade Lychee Rose and Mixed Berries Jam.
